Vegetable Idli Ingredients:

Vegetable Idlis are prepared by sprinkling vegetables on the Idli batter. You can use any type of vegetables that doesn’t spoil the texture of the Idli. The vegetables are grated or chopped finely before using them to prepare vegetable Idlis. You can use the grated or chopped vegetables along with a hint of tempering to enhance the taste of the Idlis. If you are a health-conscious person, you can skip the tempering part. Overall, adding vegetables in Idlis increases the Idli benefits making it a perfect breakfast.

  • Idli batter
  • Fenugreek Seeds – 1/10 tablespoon (optional)
  • Salt
  • Water

Step-by-Step Instructions:

Preparations:

  • Transfer the idli batter in a large vessel and mix it well to remove the air bubbles.
  • If you feel the need for it, add some salt and mix well.
  • To get the desired consistency add some water and mix it well.

To make Vegetable Idli:

  • Grate or chop your favorite vegetables finely. You can use one vegetable or a mixture of vegetables. Keep them aside.
  • Prepare a tempering adding cumin seeds, mustard seeds, and curry leaves in hot oil. This step is optional. You can skip this if you don’t want to add the tempering.
  • Take a steamer and pour some water in it. Wait until the water in the steamer starts to boil.
  • Grease the Idli molds with edible oil.
  • Pour the Idli batter into the molds.
  • Add a few drops of the temper on top of the batter.
  • Sprinkle chopped or grated vegetables on the batter.
  • Once the water starts to boil, keep the idli stand containing molds in the steamer.
  • Close the lid and steam the batter for 12 to 15 minutes.
  • After 15 minutes, check the Idlis by gently pressing on them. If no batter sticks to your fingers, then the Idlis are ready.
  • Serve them hot with Chutney and Sambar.
