Vegetable Uttapam - Quick and Easy Feasts!

Uttapams are crispy rice crepes, a South Indian delicacy similar to the classic dosa, except it has a thicker batter that’s topped with several veggies of your choice. Usually, uttapams are topped with finely chopped onions, but this version of the savoury breakfast crepe includes a mix of healthy and nutrient-rich vegetables. Vegetable Uttapam Ingredients:

  • Dosa Batter
  • Water
  • Oil
  • Salt as per taste
  • 1 finely chopped onion
  • 1 chopped tomato
  • 1 small grated carrot
  • 1/2 capsicum finely chopped
  • 1-inch ginger finely chopped
  • 2 small cloves of garlic finely chopped
  • 2 green chillies finely chopped
  • Few chopped curry leaves
  • A sprig of coriander finely chopped

Step-by-Step Instructions:

  • Add 2 tsp of salt to your Idli Dosa Batter and mix well.
  • In a separate bowl, add all the vegetables for your toppings. Add in the garlic, ginger, chillies, curry leaves, coriander and mix well. Remember to season with salt and pepper.
  • Next, heat a tawa on a medium flame. Once the surface becomes hot, pour a ladle of batter on to the tawa and spread out evenly in circular motions. As this batter is thick, make sure not to spread it out too much.
  • Put a generous amount of the vegetable mix on the batter and spread out evenly. Remember to lightly tap the veggies into the uttapam.
  • Add a tsp of oil around the edges and cover the tawa with a lid. Allow the uttapam to cook for a few minutes. You will know it’s ready when the edges turn a light brown colour.
  • Flip to the other side and let the veggies cook for a minute.
  • Finally, serve the hot vegetable uttapam with butter or mint chutney.
