The Idlis are fried till they are crispy and then tossed in curry leaves and South Indian spices. To make Idli Fry, you may use fresh or leftover Idlis. Usually, a day old refrigerated Idlis are more pertinent as they have a lesser propensity to break when frying and absorb less oil. Ingredients (1 Serving)

  • 4-5 Idlis
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Red Chilli Powder
  • 15-20 Curry Leaves
  • Sunflower Oil

Step-by-Step Instructions

1.Gather your Idlis - We suggest you use leftover Idlis as they crumble less in the pan. If you are using fresh Idlis, refrigerate it for 1-2 hours before you go ahead with this recipe. 2.Cut your Idlis into bite-sized or finger-like pieces. 3.Get your pan hot with sunflower oil, toss your Idli bites into the pan and shallow fry till they are crispy and light-brown. You may also deep fry them if you want an even and thorough cook. 4.Your Idlis must be crispy from outside and soft from within. 5.Sprinkle your chilli powder and salt and mix thoroughly. 6.To add that extra touch, garnish your Idli Fry with curry leaves and toss your Idlis around in the pan. Your Masala Idli Fry is now ready! To finish it all off, you may partake it with other South-Indian delicacies like chutney and sambar.
